A selection of Fairtrade recipes from local Fairtrade campaigners.

Fairtrade Chocolate Banana Bread, by Cecilia

Make sure you have:

  • 250g self raising flour
  • A good pinch of salt
  • 150g Fairtrade caster sugar
  • 100g unsalted butter, melted and cooled
  • 2 medium free range eggs, beaten
  • 250g peeled ripe Fairtrade bananas
  • 75g dark Fairtrade chocolate
  • 100g Fairtrade walnut pieces or 100g Fairtrade raisins* (for nuts alergics)
  • a loaf tin, greased with butter and base lined with greaseproof paper

*Tip, soak the raisins in Fairtrade rum the night before for extra flavour

Ready to cook:

  1. Preheat the oven to 180°C/350°F/gas 4
  2. Mix the flour with the salt and Fairtrade sugar in a mixing bowl
  3. Mix beaten eggs with the melted and cooled butter and add to the mixture
  4. In a separate bowl, roughly mash the bananas with a fork and add to the mixture
  5. Add the chocolate and walnuts or raisins, and mix all together with a wooden spoon until thoroughly combined
  6. Transfer the mixture to the prepared baking tin and spread evenly
  7. Bake in the preheated oven for 55 minutes
  8. Leave to cool for 5 minutes, turn out out on to a wire rack and leave to cool further before slicing
